Easy-peasy cookies

Ingredients

  • 200 g oat

  • 100 g dates

  • 60 g of dried coconut

  • 2 tbsps of sunflower oil

  • 1 tbsp of peanut butter

  • Splash of milk to combine (plant-based or cow’s milk)

Method:

  1. Blend the dates- remove the pits first- add some water before blending them. If easier you can soften them beforehand in warm water first;

  2. Add the blended dates to oat, and coconut;

  3. Add 2 tbsps of sunflower oil

  4. Add the peanut butter;

  5. Add milk until the mixture is well combined and sticky enough to make cookies shape with your hands;

  6. Cook in the over at 180’ C for 10-15 minutes.

Remember:

Dates are a choking hazard. Remove the pit inside, serve age appropriate.

How to serve them to reduce the risk?

  • Dried dates are sticky and so it is high choking hazard, make sure to grate them finely, by putting them in hot water for 10-15 minutes they become softer. You can pureed them and add them to yogurt and porridge.
